L-proline (proline for short) is one of the twenty amino acids synthesized by human body protein, colorless to white crystal or crystalline powder at room temperature, slightly smelly, slightly sweet, easily soluble in water and ethanol, insoluble in ether, butanol and isopropyl alcohol, soluble in inorganic acid.

L-proline is one of the important amino acids for the synthesis of human protein, an important raw material for amino acid infusion, and a major intermediate for the synthesis of first-line antihypertensive drugs such as captopril and enalapril. It has been widely used in food and pharmaceutical industries.

Uses: nutritional supplement, flavor agent, and sugar co-heat amino acid-carbonyl reaction, can produce special flavor substances.
