Chemical properties

It appears as colorless or white odorless crystal with sour taste. No optical rotation. It will undergo melting and decomposition at about 280 °C. It is insoluble in water, ethanol and ether. It belongs to a non-essential amino acid.

Content analysis

Accurately weigh 200 rag of the sample and dissolve it in the mixture of 3 ml formic acid and 50ml glacial acetic acid with adding 2 drops of crystal violet test solution (TS-74). Add 0.1mol/L perchloric acid for titration to the green end point, or until the blue color is totally disappeared. Per mL of 0.1mol/L perchloric acid is equivalent to 13.31 mg of C4H7NO4.

Application

Preparation

To synthesize it, maleic acid ketone is first reacted with benzylamine, followed by acetone precipitation and ethanol crystallization; further apply ether extraction, acidification and hydration; refine to obtain the final product.

Usage limits

It can account for 7.0% of the total protein amount in food (including I, asparagine; FDA $ 172.320, 2000).
