Aroma | Fresh-citrusy, green-oily odor with more or
less pronounced aldehydic undertone, according to the chemical purity of Decanaldiethylacetal. The
presence of only 2-3% free Aldehyde is sufficient to overcome the characteristic odor of
the Decanaldiethylacetal.
The Acetal finds some use in flavor compositions, mainly of the Citrus type, Brandy,
Cognac, Liqueur, etc. and the concentration
is usually mere traces in the finished product. | Physical properties | Colorless liquid. B.P. 241°C.
Very slightly soluble in water, soluble in
