Introduction
Hydroxymethylfurfural (HMF), also 5(hydroxymethyl)furfural, is an organic compound formed by the dehydration of certain sugars. It is a white lowmelting solid (although commercial samples are often yellow) which is highly soluble in both water and organic solvents.
