Raffinose is soluble in water,

Slightly soluble in polar solvents such as ethanol,It is insoluble in non-polar solvents such as petroleum ether.
The solubility in water is 14% at 20 ºC,The solubility increases with the increase of temperature,At 80 ºC,It is higher than the solubility of sucrose.

Thermal stability
The thermal stability of raffinose is almost the same as that of sucrose,It remains stable even when heated to 140 ºC,Therefore, it is very convenient to use in some foods that need to be processed by hot pressing;
But when heated to 180 ºC,Raffinose breaks down into cellobiose and fructose,Molasses may be further decomposed.Under acidic conditions,The thermostability of raffinose is still good under acidic conditions,
