Properties: 2, 3-pentanedione is yellow-green oily liquid. Sweet butter, cream, caramel aromas with a nutty base. It has a slightly sweet odor of quinone, diluted to a creamy odor. It is slightly soluble in water and soluble in organic fluxes such as ethanol. Easy dimerization, can occur oxidation, reduction, addition, condensation reaction.
