2、 Physical and chemical characteristics
Appearance and Properties: Orange yellow or dark yellow powder, whose color varies from primrose to scarlet and which is fairly soluble in water, ethyl alcohol and propylene glycol, but insoluble in fat. The water solution of the pigment is of bright and vivid yellow hue, and appears in weak acidity or alkalinity.
PH: The environmental PH value has little influence on its hue. At PH 2.0-6.0, it becomes a little unstable; at PH 7.0 or above, it is stable and you can maintain stable yellow; at PH value of 4.0-6.0 or 8.0-11.0, it gets more stable than β-carotene.
Stability: The pigment is strongly resistant of reduction, microbial resistance, light fastness, heat resistance, and has good resistance to metal ions because its color, within the PH value of 4-11, is essentially the same;
Reactivity: Metal ions have no influence on it but in the case of iron, it becomes black.
An Overview of the Risk:Extracted in purified water rather than in any organic solvent; therefore, it’s free from residual of organic solvents and has no risk.

It can be used as a natural pigment for flour products, noodles, cakes, puddings, jam, jelly, candy, cookies, drinks, wine, beverage, dairy product, cocoa products, chocolate products, ice cream, chestnuts, pickles, yellow rice, cosmetics, silk cloth, cotton cloth, medicines and Chinese Herbs, etc.
