Chemical Properties
Molasses extract is obtained as a by-product from the production and refining of sucrose. Sucrose is first obtained from sugarcane through a multistep process. The residue from the refining process yields blackstrap molasses, which is used as cattle feed; for production of industrial alcohol, yeast, organic chemicals, rum; and as a flavorant in cooking. A more refined molasses is used in certain types of confections, in a wide variety of baked goods, particularly meat and vegetable dishes, and as a sweetener and coloring agent. It is also widely accepted as a “health food.” When blended with more refined grades of molasses, it can be used in any number of recipes
