Methyl 2-Methylthiopropionate is a synthetic flavoring agent that is a colorless liquid of slightly fruity odor with a suggestion of sulfur. it polymerizes slowly and should be stored in glass or tin containers. it is used in pineapple flavors to give the true note of pineapple. it has applications in beverages, ice cream, candy, and baked goods at 0.5–1 ppm.
