Cis-3-Hexenyl anthranilate is a pale straw-colored or pale amber-colored, somewhat viscous liquid.Practically insoluble in water, soluble in alcohol and oils.

Uses
The odor type of cis-3-Hexenyl anthranilate limits its use to a very few possible applications in perfumery,perhaps as a modifier in Colognes, Neroli bases, Petitgrain compositions, etc.
Preparation
Cis-3-Hexenyl anthranilate is produced by estenfication of cis-3-Hexenol with Anthranilic acid, which can alternatively be undertaken as a cross-esterification or a trans-esterification with Methyl anthranilate as one component.
Aroma threshold values
Aroma characteristics at 1.0%: deep sweet ripe fruity, concord grape skin with a jasmine and lilac floral note and a naphthyl-like nuance.
Taste threshold values
Taste characteristics at 10 to 100 ppm: floral lilac and jasmine with a fruity berry and anthranilate grape nuance. It leaves an interesting woody and jamy mouthfeel.
