Sodium Tetrametaphosphate is a sequestrant and emulsifier that is infinitely soluble in water. It is used as a water binder in cured pork. It is also termed graham’s salt.
Purification Methods
Crystallise it twice from water at room temperature by adding EtOH (300g of Na4P4O12.H2O, 2L of water, and 1L of EtOH), wash it first with 20% EtOH then with 50% EtOH and dry it in air [Quimby J Phys Chem 58 603 1954].
