| PROPIONIC ACID TRANS-2-HEXEN-1-YL ESTER Usage And Synthesis |
Aroma | Powerful and diffusive, fruity-sweet odor,
free from fatty notes. More fruity, more sweet
than the cis-isomer, and not so dry in its
greenness.
The taste is powerfully fruity, somewhat
green, but sweet in dilutions below 5 ppm. | Chemical Properties | (E)-2-Hexenyl propionate has a fruity odor with a ripe apple/pear note | Occurrence | Reported found in guava, black tea and fresh plums. | Uses | Propionic acid trans-2-hexen-1-yl ester lends itself more to flavor tompositions than to perfumes. It could be used
in Tutti-frutti:compositions as a powerful
factor, or as a modifier in Apple, Pear, Pineapple or Peach, but it is not quite as versatile
as the Acetate or the Butyrates. | Production Methods | Propionic acid trans-2-hexen-1-yl ester can be produced by esterification of trans-2-Hexenol
with Propionic acid under azeotropic conditions. | Definition | ChEBI: The propanoate ester of (2E)-hex-2-en-1-ol. | Aroma threshold values | Aroma characteristics at 1.0%: green, fruity apple and pear pulp with creamy and powdery nuances. | Taste threshold values | Taste characteristics at 1 to 5 ppm: green, oily fruity with a slight soapy mouthfeel |
