Chemical properties:

Pancreases are a mixture of enzymes extracted from the pancreases of pigs, sheep, or cattle. It is a kind of white or microyellow powder, partially soluble in water, and the aqueous solution is stable at Ph2 ~ 3, unstable above pH6, and the presence of Ca2+ can increase its stability. Partially soluble in low concentration of ethanol solution, insoluble in high concentration of ethanol, acetone and ether and other organic solvents, slightly smelly, but no mildew odor, moisture-inducing. In case of acid, heat, heavy metal, tannic acid and other protein precipitators, the enzyme activity is lost.
