用途：白色结晶性粉末或无色晶体（以淀粉或大米为原料），或呈棕黄色（以糖蜜为原料）；易溶于沸水，微溶于冷水，尤其不溶于醋酸。其一钠盐——谷氨酸钠用作调味品，商品有味精和味素等。代盐剂、营氧增补剂、鲜味剂（主要用于肉类、汤类和家禽等）。亦可用作虾、蟹等水产罐头中，用量为0.3%~1.6%。如用于方便食品的肉汤和汤类，10g/kg 。用于饮料、焙烤制品、肉、肉香肠、肉汤、乳及乳制品、调味料、谷类制品，均400mg/kg。作为营养增补剂，限量12.4%。
