白色颗粒或粉末,有乳酸发酵的味道,微有风化性。乳酸钙能溶于水,易溶于热水(5%左右),不溶于乙醇等无机溶剂。强化饮料时易于获得稳定、澄清的溶液,水溶液PH为6.0~7.0,溶解后风味平和;
乳酸钙主要用于食品添加剂,补充人体缺钙,面包、糕点等缓冲剂、膨松剂,补钙剂。也常用作]营养增补剂、酸度调节剂、抗氧化剂、乳化剂、稳定剂和凝固剂、增稠剂等。
