프로피온산칼슘 C화학적 특성, 용도, 생산
순도시험
(1) 물불용물 : 이 품목 10g에 물 100mL를 가하여 때때로 흔들어 섞으면서 1시간 방치한 다음 불용물을 유리여과기(1G4)로 여취하고 물 30mL로 씻고 180℃에서 4시간 건조할 때, 그 양은 20mg 이하이어야 한다.
(2) 유리산 및 유리알칼리 : 이 품목 2g을 새로 끓여서 식힌 물 20mL에 녹이고 페놀프탈레인시액 2방울을 가하여 이를 시험용액으로 하여 「프로피온산나트륨」의 순도시험 (2)에 따라 시험한다.
(3) 비소 : 이 품목을 비소시험법에 따라 시험할 때, 그 양은 4.0ppm 이하이어야 한다.
(4) 납 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 5.0ppm 이하이어야 한다.
(5) 철 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 50ppm 이하이어야 한다.
(6) 수은 : 이 품목을 수은시험법에 따라 시험할 때, 그 양은 1.0ppm 이하이어야 한다.
(7) 불소화물 : 이 품목 1g을 정밀히 달아 「구연산칼슘」의 순도시험 (8)에 따라 시험한다(10ppm 이하).
확인시험
(1) 이 품목 0.5g을 물 5mL에 녹이고 묽은황산 5mL를 가하여 가열하면 특이한 냄새가 난다.
(2) 이 품목은 확인시험법 중 칼슘염의 반응을 나타낸다.
정량법
정 량 법 이 품목을 건조한 다음 약 1g을 정밀히 달아 물에 녹여 100mL로 한다. 그 중 25mL에 물 75mL 및 10% 수산화나트륨용액 15mL를 가하여 약 1분간 방치한 다음, 2-옥시-1-(2''-옥시-4''-설포-1''-나프틸아조)-3-나프토에산시약 0.1g을 가하여 즉시 0.05M 이.디.티.에이.용액으로 적정한다. 종말점은 적색이 완전히 없어지고 청색이 되는 점으로 한다.

Calcium propionate is a white powder(s) or monoclinic crystal(s), crystallizes as the monohydrate in monoclinic plates and as the trihydrate. The anhydrous salt dissolves up to 41.7 wt % in water and is insoluble in ethanol. The aqueous solutions can cause inflammation. It is used to mold-retardant additive for bread, tobacco, pharmaceuticals, antifungal agent.[HAW93]용도
Calcium Propionate is the salt of propionic acid which functions as a preservative. It is the most widely used antimycotic in breadmaking. it is effective against mold, has limited activity against bacteria, and no activity against yeast. it is soluble in water with a solubility of 49 g/100 ml of water at 0°c and insoluble in alcohol. it is less soluble than sodium propionate. its optimum effectiveness is up to ph 5.0 and it has reduced action above ph 6.0. It is often utilized at about 0.2%, flour basis; higher concentrations lead to flavor problems and begin to inhibit yeast fermentation. it is used in bakery products, breads, and pizza crust to protect against mold and “rope.” it is also used in cold-pack cheese food and pie fillings. typical usage level is 0.2–0.3% and 0.1–0.4% based on flour weight.주요 응용
As a food additive, it is listed as E number 282 in the Codex Alimentarius. Calcium propanoate is used as a preservative in a wide variety of products, including but not limited to bread, other baked goods, processed meat, whey, and other dairy products. In agriculture, it is used, amongst other things, to prevent milk fever in cows and as a feed supplement Propanoates prevent microbes from producing the energy they need, like benzoates do. However, unlike benzoates, propanoates do not require an acidic environment.Calcium propanoate is used in bakery products as a mold inhibitor, typically at 0.1- 0.4 % (though animal feed may contain up to 1 % ) .
When propanoic acid is infused directly into rodents' brains, it produces reversible behavior changes (e.g. hyperactivity, dystonia, social impairment, perseveration ) and brain changes (e.g. innate neuroinflammation, glutathione depletion) that may be used as a model of human autism in rats.
According to the Pesticide Action Network North America, calcium propionate is slightly toxic . This rating is not uncommon for food products; vitamin C is also rated by the same standards as being slightly toxic . Calcium propanoate can be used as a fungicide on fruit.

Calcium propionate is generally used as a food preservative in bread. It has also been reported to reduce milk fever in dairy cows. Calcium propionate is the most effective below pH 5.5. Below this pH, the active component, propionic acid, is undissociated and becomes active. The dough pH needs to be below 5.5 and well controlled to effectively control mold.Safety Profile

Calcium propionate is affirmed as GRAS for use as an antimicrobial under 21 C.F.R.184.122 1 with no limitation on the level of use other than current good manufacturing practice (gmp). There is no obvious self-limit on the level of use. In commercial practice the amount of calcium propionate used will be limited by cost and the possibility of imparting off-tastes or textures to food when gmp concentrations are exceeded.Though Calcium Propionate E282 is regarded as safe supplement, there maybe some side effects: damage your stomach lining by exacerbating gastritis and inducing severe ulcers and cause irritability, restlessness, inattention and sleep disturbance.
