1.主要成分
薄荷脑（35%~60%），薄荷酮（约17%~21%），乙酸薄荷酯（约3%~9%）及异薄荷酮，薄荷喃呋，新薄荷脑，L-苧烯，胡椒薄荷酮等。
易挥发，易燃。
微溶于水，溶于乙醇，乙醚，氯仿和各种脂肪油中。
2.制法
由唇形科薄荷草本植物椒样薄荷地上部分的全椒微干植物（水分不超过55%）或干叶经水蒸汽蒸馏而得的为椒样薄荷原油，再经单离除去部分薄荷脑成分而成。得率为0.3%~1%（以干叶计，原油得率1.5%~2%）。
3.质量标准
A.总酯量（以乙酸薄荷醇酯C12H22O2计） ：≥5.0%
B.总薄荷脑两（以薄荷脑C10H2O计） ：≥50%
C.醇中溶解度 ：1ml可溶于3ml 70%乙醇
4.用途
食用香料。
主要用以配制水溶性薄荷香精（用量10%左右）及油溶性薄荷香精（用量可达38%），或直接加于清凉饮料，酒及胶姆糖，泡泡糖（用量可达0.6%）等中。
